I’m back with my 4th episode of Whit’s Kitch cooking coconut chicken curry, chatting, laughing, and drinking with my friend – DANIELA BELL – owner of The Makeup Zone here in Dallas, TX. She’s worked with stars of the Real Housewives (RHOD and RHONY) amongst an array of other celebrities, brides, and ladies getting glammed for Dallas’ best events. Coconut Chicken Curry
Whit’s Kitch Ingredients:
1.5 lbs chicken breast1/2
1/2 tsp salt
1/2 tsp curry seasoning
2 tbl EVO
1 cup diced pineapple
1 red pepper cut into bite sized strips
3/4 cup unsweetened coconut milk
1 tbl brown sugar
Whit’s Kitch How to:
Sprinkle chicken with salt and curry seasoning
In large skillet, 1 tbl EVO on high heat
Add chicken and saute and toss until browned evenly
In second skillet, 1 tbl EVO on high heat
add bell peppers and pineapple – saute for 3 minutes
mix in coconut milk and brown sugar for 1 minute
add mixture to chicken skillet and let simmer medium heat for 2 min
